Abstract

The production and consumption of goat milk are of fundamental importance to millions of people and participate in the socioeconomic development of many regions. The purpose of this review was to present the issues related to production and market, the physical and chemical properties as well as nutritional, therapeutic and sensory goat milk compared to cow's milk as a baseline measurement and highlights some important attributes technology and products that reflect the goats.
