TRAINING HIGIENIC SANITARY IN MILK PRODUCTION: CASE STUDY IN SMALLHOLDER FARMERS IN SOUTH EAST PARANA

The aim of this study was to transfer information to the farmers, by hygienic sanitary training, and verify if there was an improvement in milk quality through analysis of the Total Bacterial Count and Somatic Cell Count. The first stage of this research was the characterization of dairy farms that were worked as a Reference Units. This characterization was done by means of questionnaires and visits. The hygienic sanitary training, applied to each weekly visit in the units was made based on requirements set out in Instrução Normativa nº 51, Ministério da Agricultura, Pecuária e Abastecimento (MAPA). Finally, was verified the improvement of quality milk, through collect samples of raw milk and analysis in each Reference Unit. Thus, it was noted that the improvement in the values of Total Bacterial Count and Somatic Cell Count, and can be concluded that the transfer of information and technology through the hygienic sanitary training was effective. It is noteworthy that values of Somatic Cell Count suffer interface from external factors, while the total bacterial count was greater reduction in values, it depends on the producers performed by the milkers.Downloads
