Abstract

Milk is part of human nutrition for thousands of years. However, in the last years this rich food have been lost space for others products. Moreover, several researches and studies have been conduced to better understand the role of this food. Results show more functions that well know source of calcium. Properties like anticarcinogenics, anticariogenic, prevent enamel demineralization, weight management and antidiarrheic have been discovered. More than this, milk and dairy products are good vehicles to introduce other compounds that could enrich more this products making then very important to our diets.
