BACTERIOLOGICAL QUALITY OF REFRIGERATED RAW MILK IN RURAL PROPERTIES OF PARANA STATE

The objective of this study was to evaluate the quality of refrigerated raw milk in the Paraná state, encompassing the cities of Arapoti, Carambeí and Castro. Data collection was conducted from July 2008 to June 2011. Were collected monthly, on average, 94 samples of raw milk refrigerated in Arapoti, 119 samples and 565 samples in Carambeí Castro, and were sent for analysis of total bacterial count. In order to check if the milk is of good quality, the analysis results were compared with the total bacterial count limit set forth in Instrução Normativa nº51, of Ministério da Agricultura, Pecuária e Abastecimento. The results of this research were that 11.04% of samples fall outside the standard set by IN 51 for the period 2008/2011. In relation to the value of 100,000 UFC/ mL, which will come in January of 2011, 72.73% of the samples were above the limit. Thus, we conclude that the low quality of milk was due to lack of correct procedures for milking hygiene, which should become habit for those involved in dairy farming. Also noteworthy are the external factors that interfere with the values of CBT, as the season, which reduced the production of milk.Downloads
