CARTAGE OF MILK IN BULK: A CASE STUDY

The collection of bulk milk should not be a novelty in Brazil, since in 2002 the Federal Government instituted the Normative Instruction No. 51 to establish parameters for each region of the country. This study aimed to determine the practical significance of Instruction 51 for the cartage of bulk milk. For this, a questionnaire was done with 54 questions to 16 drivers working with the transportation of bulk milk run through 28 cities in the south of the state of Minas Gerais. The questions had their focus in all aspects of cartage and bulk milk, since road conditions, collecting, cleaning and unloading of trucks on the platform to receive the milk. The questionnaire was based on Instruction 51, and other questions of industry practices, where key points are established and if not obeyed affect the transport of bulk milk, milk quality, processing and manufacturing of dairy products. After the interview, graphs and figures were made with the answers. According to the survey, the biggest problems in the transportation of bulk milk refer to poorly maintained roads, lack of chlorinated water in the farms, not the hose and rinse utensils after collection of milk for some drivers, no verification of cleanup of trucks by the company, little use of the test swab on the inside of the tanks of trucks; little assistance to producers, no use of uniforms by most drivers..
