Biofilmes são comunidades de microrganismos que podem se formar sobre superfícies industriais em decorrências de falhas no procedimento de higienização. Indústrias processadoras de leite e produtos lácteos são muito susceptíveis à formação de biofilmes por processarem matéria-prima rica em nutrientes e, geralmente, com microbiota diversa e abundante. Biofilmes microbianos representam sérios riscos para este setor, uma vez que células sésseis podem se desprender e contaminar os alimentos que passam pelo local, causando problemas de ordem econômica pela deterioração precoce dos produtos ou colocando em risco a saúde pública. Dentre as novas alternativas pesquisadas para o controle de biofilmes microbianos encontra-se a utilização de soluções sanitizantes contendo óleos essenciais ou seus constituintes. Óleos essenciais são metabólitos secundários de vegetais que apresentam ação antimicrobiana primariamente por atuar na bicamada lipídica da membrana citoplasmática. Esta revisão bibliográfica foi desenvolvida com intuito de abordar os principais aspectos inerentes a biofilmes microbianos de importância para as indústrias de laticínios, como: características gerais, locais de formação, causas e consequências do seu desenvolvimento, além da utilização de detergentes e sanitizantes químicos como alternativa convencional de controle. A utilização de óleos essenciais e seus constituintes como novas alternativas de controle foram assuntos tratados em seguida, enfatizando o mecanismo de ação antibacteriana e os estudos já desenvolvidos utilizando soluções contendo estas substâncias para o controle de biofilmes bacterianos.
